During the Green Coffee training, you will gain skills and knowledge about green coffee. You will get to know its species and botanical varieties, learn about its crops, defects and how to evaluate it.

Green Coffee – Basic level:

The training introduces you to the basic concepts of green coffee. During its duration, issues related to coffee botany are discussed, taking into account botanical species and varieties. Participants learn about the places where coffee is grown in the world, have the opportunity to follow the different stages of its production: cultivation, harvest, processing, transport and storage. During the training, the procedure for assessing the quality of green coffee is presented, students learn its basics such as: grain segregation, moisture measurement, defects recognition and their impact on coffee sensors. The theoretical part also includes information on coffee certificates and the production of decaffeinated coffee.

The course includes:

  • Coffee species and botanical varieties: classification, physical and sensory differences – coffee origin and its place of cultivation.
  • The impact of climate on coffee cultivation.
  • Coffee production in the world.
  • Classification of coffee farms and management of coffee crops.
  • Coffee harvest and methods of its treatment: dry, pulped natural washed, anaerobic, sensory impact – transport and storage of coffee.
  • Green coffee quality assessment procedure: measuring moisture and density, sorting coffee in terms of grain size.
  • Green grain defects: classification, visual identification, impact on sensors – future market.
  • Green Coffee Certificates.
  • Decaffeinated coffee.

Additional information:

  • Requirements for participants: experience is not required.
  • The training ends with a theoretical and practical exam. Obtaining positive results of the exams gives the opportunity to receive the SCA certificate.
  • The number of participants: 4 to 6 people.
  • Duration of the course: 8 hours (a 45-minute meal break is planned during the course).
  • Course price without SCA certificate: PLN 990 gross per person.
  • SCA certificate and “on-line” exam price: PLN 575 gross per person.

Intermediate level:

At an intermediate level, issues related to coffee botany, the production process and storage conditions are developed. There is more information about coffee certificates and methods of decaffeination. An important topic of the course is the quality of green coffee. Participants carry out the green coffee segregation procedure – green grading. They also learn how to identify defects during SCA cupping. The training program also includes information on the functioning of the coffee markets, drawing up trade agreements and other issues related to the sale of green coffee.

  • History of the development of coffee crops in the world.
  • Coffee species and botanical varieties.
  • Coffee processing methods.
  • Statistics of world coffee crops.
  • Seasonality of crops.
  • Climatic and microbiological threats to plantations.
  • Methods of decaffeination.
  • Green coffee quality classification.
  • Green coffee defects: types, causes, impact on sensors – Defects of roasted coffee.
  • Green grading procedure.
  • Green coffee certificates.
  • Coffee transportation: safety rules, shipping documents.
  • Physical and future coffee market.
  • Types of commercial contracts and terms of their conclusion.
  • Formulating commercial contracts, the concept of arbitration, Incoterms rules.
  • Green coffee storage conditions, risks of improper storage.

The course is recommended for people who have completed the SCA Green Coffee Foundation course, work professionally with green coffee or have already acquired basic knowledge on the subject.

Professional level:

The training at the professional level is aimed at using the knowledge acquired at the intermediate level, deepening it and preparing the student for work in the green coffee industry. In addition to knowledge about coffee botany and various stages of its production, students continue to learn the green grading procedure. At the professional level, the mechanisms of functioning of the futures market are discussed the most, with an emphasis on practical exercises in price calculation, drawing up trade agreements, and risk management.

The course includes:

  • Research on the genetic diversity of coffee.
  • Chemical composition of green coffee.
  • The impact of climate change on coffee cultivation.
  • Coffee plantation: soil management and protection, shade control, coffee growth control, coffee diseases.
  • Advanced considerations for the various stages of the processing processes: fruit quality, harvesting technologies, fermentation, water management, drying.
  • Classification of defects and the reasons for their formation, impact on sensorics.
  • Coffee transport: preparation of coffee for transport, documents used during transport, sea transport, land procedures.
  • Fumigation.
  • Coffee certificates.
  • Decaffeination.
  • Types of coffee bags.
  • Futures markets: currency exchange and unit conversion, ICE and market mechanisms, hedging, supervision of futures trading, technical analysis of the market.
